Has anyone made an ice cream cake? and are they hard to make? That is one thing I've never made. I have a friend that is coming over Fri with her husband and son and it was her birthday yesterday..So I want to make her dinner and cake and give her a gift.. I hope some one out there can help me..thanks..

Hello there Sister. The only one I have made was a watermelon icecream cake. The center was strawberry or raspberry sherbert with chocolate chips in it for the seeds. Then a small layer of white, and then a layer of lime sherbert for the green of the rind.
I guess I just listed this backwards, since when you put it in the pan it would be green, white, pink. I did this in a batter bowl, so when it popped out it was rounded like a watermelon. It was a great hit here.
Soften the icecream a little to spoon it in, and you should freeze in between layers. Then when getting it out of the container, dunk it in hot water for a few seconds and then top over on your plate, and freeze until serving time.

My Mom made an ice cream cake for my brother's birthday a couple years back. She used ice cream sandwiches and Neapolitan ice cream. I think she lined the bottom with the vanilla ice cream, then laid the sandwiches down, and spread the rest of the ice cream on top. It took awhile because the ice cream has to be soft, and then you have to freeze it after you lay the sandwiches down. But it was good!
