What's On The Menu?

Today I have been working on this coming week's menu and grocery list to coordinate with it. Lately it seems that what I have been buying isn't lasting the whole week like it should. I had to do some looking over in the menu and the grocery list and add better snacks and lunches that will keep us fuller longer. I thought I would share the menu plan of a family of 11.

Menu Planner October 22 - October 28
Wednesday        
Lunch: Egg Salad        
Snack: Apples and Dip
Dinner: Fried Chicken, Mashed Potatoes, Green Beans
, Peas

Thursday            
Lunch: Noodles with Italian dressing or butter, parmesan, and garlic
Snack: Veggies
Dinner: Red Chili Burritos, Beans, and Spanish Rice


Friday            
Lunch: Leftovers
Snack: Cottage Cheese and sunflowers
Dinner: Sloppy Joes, Fried Potatoes, Peas, Corn Salad

Saturday            
Lunch: Grilled Cheese
Snack: Deviled Eggs
Dinner: Steaks, Mashed Potatoes, Green Beans

Sunday            
Lunch: Tuna Salad
Snack: Yogurt
Dinner: Crockpot Chicken, Potatoes, Carrots, Peas

Monday            
Lunch: Clam Chowder
Snack: Crackers and Cheeseball
Dinner: Hamburgers, French Fries, Pork and Beans, Salad

Tuesday            
Lunch: Chicken Salad
Snack: Chips and Salsa
Dinner: Barbecue Chicken, Rice, Green Beans, Peas

What does your menu plan look like this week? I only go to the store once a week, so I make sure I get everything we need!
I am hoping that this menu will make our food last longer. We'll see! :)

Great Hot Dip For Fall

I love party foods! Especially dips! One of my favorite snack dips is Hot Broccoli Dip. It is a Pampered Chef recipe and it is so good! Our friend Danielle is the one who introduced it to us about 10 years ago. It was always a favorite when we got together for a Creative Memories scrapbook workshop, PartyLite candle show or just when we stopped over at each others houses!
We hadn't had it for a long time.... I am talking like a couple of years. When I was planning Mama's surprise party back in August, I decided it HAD to be on the menu!

So I had to hunt for the recipe because I couldn't remember it. It took a bit, but finally found a site that had it! I thought I should share it with y'all too!


Hot Broccoli Dip

1 cup fresh broccoli florets, chopped (about 6 oz.)
2 TBSP onion, chopped
2 TBSP red bell, chopped
1 oz (1/4 cup) Parmesan cheese, grated
1 garlic clove, pressed
1 cup (4 oz.) shredded cheddar cheese
1/2 cup fat-free sour cream
1/2 cup fat-free mayonnaise
1/8 tsp ground black pepper
Preheat oven to 375° F.
Chop broccoli, onion, and bell pepper; place in a bowl. Grate parmesan cheese; add 2 tablespoons to vegetable mixture. Press garlic and add to vegetables along with remaining ingredients, mixing well.
Spoon into a small baker pan. Bake 20-25 minutes or until heated through. Sprinkle remaining 2 tablespoons Parmesan cheese over top and surround with Pita Chips for serving. Yield 2 cups (16 servings)


When I made it for Mama's party, it was enough for about 20 people. We eat it with tortilla chips. Normally just corn, but the blue corn are extremely good with it! Of course, we only eat organic too! ;)

I Heart Clam Chowder

One of my favorite soups is Clam Chowder. YUM! Back in February and March our menu plan had a whole week where we ate different soups for dinner. The Clam Chowder was my favorite! I found a really great recipe that I loved and thought I would share it with you too.

Clam Chowder

Ingredients:
3 slices turkey bacon, diced
1 cup chopped onion
3 cups diced potatoes
1 bottle (8 ounces) clam juice
1 teaspoon salt
1/4 teaspoon pepper 
2 cans (approximately 7 ounces each) minced clams
3 tablespoons flour
2 cups half-and-half
1 cup milk
I did not use any clam juice. I used just the cans of clams and then rinsed out the cans with water. It was plenty clammy too!

Prep and Cook:
Cook bacon until crisp in a Dutch oven or large, heavy saucpan. Remove bacon to paper towels with slotted spoon; drain. Add onion to bacon drippings; sauté until softened. Add potatoes and clam juice, salt, and pepper. Cover and simmer for about 15 minutes, or until potatoes are tender. Remove from heat. Add minced clams with their liquid. Whisk flour into milk; add to chowder with half-and-half. Cook over medium heat, stirring constantly, until clam chowder thickens and bubbles, or about 3 minutes.
Clam chowder recipe serves 4.

This clam chowder is so good! I absolutely loved it! I think I am going to put it on the menu for this next week! Its really good with homemade rolls too!

Homemaker In Training: Dinners In A Hurry


My friend, Eyebright, has started this really great meme called Homemakers In Training. It was designed for all girls out there to learn to become better homemakers.  Here is why Eyebright started this: "I realized that there are a lot of things that I don't know how to do, that will be necessary when I am running my own household.  (Just a note on the side, isn't household kind of a cool word?  For me, it means that my house is my stronghold, a place where I can protect myself from the world.  I just thought that was neat.) So, I came up the idea to work on some of that stuff, and then post about it, sharing with you how I learned to do it.  My schedule will be pretty loose.  I will probably not post every Thursday.  I also thought that other girls/women, would be interested in doing it too, so I am going to use a Mister Linky, that way, anyone else who participates, can go and look at how everyone else is doing.  Then we can encourage one another in our efforts to become a Proverbs 31 woman."

 I have really been meaning to join in these and always forget. But now I am going to participate every Thursday and you can too! :)
 This last week was Dinners In a Hurry and I would like to share some of my easy dinner ideas! Here is what Eyebright asked us to answer:

What are your quick and easy recipes?
CcubedN is a great quick and easy meal that you can make. It only takes about an hour for prep and cook time, so very practical.
Cows In A Blanket Fun meal that doesn't take too much time, but very filling. Cows In A Blanket are a great on the go food too!
Flat Tacos I love Mexican! Flat tacos are so good and easy to make. Plus you don't have to make the taco itself. Just make the beans and prepare the toppings and let the family top their own tacos!
Fried Fish is a very great tasting dish that I just love! The batter is easy to whip up and doesn't take too long to fry either. If you are wanting a meal that is really healthy and good,  but easy, go with fish!

What kind of meals do you come up with, spur of the moment?
 I love creamy things. A lot of the meals I come up with that need something creamy use cream cheese or ranch. Those two ingredients will not only creamy your dish, but they also add a great flavor to it!
