Daily Rantings on the homestead.....

Well, I just don't ever seem to have time to post with the garden coming in and just trying to stay on top of daily doings.....

Today, I have put up two more quarts of pickles and 4 more gallon bags of squash.  The cucumbers seem to come in about 4 or 5 a day.  So it is a day by day process. It's the same way with the squash.  I am trying to put up all I can, as we ran out of pickles and squash last year.  We have also picked eggplant and cherry tomatoes.  I fried up eggplant and green tomatoes Monday night and it was soooo good.  Ofcourse, not too good on the cholesterol but I just could not resist.  Our tomato plants are not looking as good and lush as previous years and we are fighting squash bugs like crazy but all in all I can not complain.  The beans look great and I figure I will be picking and freezing them in the next week or so.  I have to say again how much I love preserving the harvest and the great job God has done for us in the garden.

I am now off to finish putting up the squash and will be putting a few more load of clothes in the wash and on the line.

Summer is a busy time of year, for homestead moms is it not? I do hope that thru all the business of the season you will find JOY in your service to your beloved family! I so enjoy your friendship and appreciate all you have to share.

Oh, Gloria,
It is not hard for me to find Joy this time of year. It is the best time of year for me. The kids and I are always busy on some type of project. I am so thankful and blessed.

I was wondering what recipe you use to put up just one or two jars of pickles at a time. My recipe says you have to have 10 to 12 pounds and I don't get that much in a day. I guess I could do the math and try to figure how much of everything to put if I just have one jar...
