Southern Caviar

This is a great recipe that I had at a friends house not too long ago.

Southern Caviar

1(15 ounce) can whole kernel corn, drained

2 (14 ounce) cans black-eyed peas, drained

2 medium tomatoes, chopped fine

4 green onions, chopped

2 cloves garlic, minced

1 medium green pepper, chopped

1 small jalepeno pepper, chopped

2 tablespoons fresh or dried parsley

1(8 ounce) bottle Italian salad dressing

Mix as listed in large bowl.  Mix well and marinate several hours or overnight in refrigerator.  Serve cold with tortilla chips.

I substitute the things that I have canned sometimes but I wouldn't do that with the black-eyed peas.
