Help... I am overrun with tomatoes...

This is a good problem to have but I have tomatoes coming out my ears. So far I have put up just diced tomatoes and salsa. I would like a good recipe for spaghetti sauce. I don't make alot of spaghettie but I thought it would also be good for a pizza sauce. I buy spaghetti sauce now to use as my pizza sauce. We are also over run with squash, zuchinni, okra, peas, and corn. My freezer is full and the shelves of my pantry are getting full also. I am so thankful. God provides even in a drought. Which we are in here in North Mississippi. I water it feels like all the time. It has also caused my tomatoes to not look so great but they have been canning well. The peas have not produced as much as normally but we are thankful for what they are producing. I have already put up 23 bags and have a grocery bag full that I need to shell. Again, we are so thankful and busy. I am off to grate zuchinni and make some bread.

Have you every done any dehydrating? I do a good bit of it when I get more stuff than i can eat, can or freeze. if you need recipes and how to\'s let me know.

Trixi - I canned salsa today - but I had to go buy some tomatoes at the Farmer's market this morning, I had some from the garden, but not quite enough - would love to see what all you have put by - it sounds amazing!!

hey Trixi! Sounds wonderful! your tomatoes must be related our cucumbers........we are competing with our chickens for tomatoes unfortunately - live and learn.
You'll have to post some photos of your garden for us???
I have in the past, put tomatoes in the blender and then into zip lock freezer bags - froze them flat and then they were ready for soups and sauces whenever I needed. Homemade spaghetti sauce is something I only make - I can NOT eat store bought. It's an all day event - but would be glad to share if you're interested. When using fresh tomatoes or those frozen from fresh - it takes a bit longer and more because of the water content. You could go ahead and cook your tomatoes "down" and can that as your general sauce..... what do you think?
Please share your zuchini bread recipe - pls, pls, pleeezzze.
