Picking blueberries and blueberry pancakes

This is the day that the Lord has made.

 

Blueberries, Blueberries, what to do with blueberries?  Well, our family went and picked blueberries last week.  We picked about 7 lbs.  I canned 4 pints, and froze 1 qt. and the rest I gave away.  I love doing that.  Anyway, In years past, I taught kindergarten and I loved reading Blueberries for Sal to my class.  Now I read it to my own children that I homeschool.  I guess this just encouraged my love of blueberries.  This morning we had blueberry pancakes.....

 

Blueberry pancakes

1 cup sifted self rising flour

1 Tblsp. honey

1 egg

1 cup milk or buttermilk

3 Tblsp. melted butter

2 Tblsp. blueberries

Mix together and cook on a griddle or cast iron pan.  Makes 10 pancakes.  Allow a little more time to cook as the blueberries take a little longer.  I usually turn my heat down a little bit.

Blueberries for Sal is a really nice book. You've reminded me that I'll have to get a copy from the library and read it to my own little ones (my older ones do remember it fondly).
We've been picking blueberries from our own bushes and enjoying them too.

Love that book. My boys know it by heart. They growl like bears when we're in the patch. What memories.....McCloskey was a genius, God rest his soul.

I love giving away berries, too, much to my husband's chagrin. They sell so well at the market, but there is nothing like the look on a face when you give someone that unexpected gift. It's really your time as much as your berries that so surprises people. Keep it up!

Those sound sooo good! I just had this same problem with lemons, but Patti at Collin's Country sent posted a bunch of lemon recipes after reading about my dilema! Enjoy your blueberries!!!
