We've been baking

Yesterday, I had the kids start on the Toy Reduction of the toy room - I would like to call it a Family Room, but really it is a home for the ginormous stash of toys that my children have ... and the majority of them they don't even play with!!!

So, today, I asked them to continue on with the toy reduction and I must say that they are doing really well at it.  We did however take a break from it and turned our attention to some baking that needed to be done.

Tomorrow is Mug Up and the kids were hoping that they could have some cookies (or other sweets) to go in their lunches.  So, all work on the toy room stopped and we donned on our aprons and we each started baking something.  Josh made a loaf of Gluten Free bread (he used the last of the loaf for his sandwich in his lunch and he actually realized that he needed another loaf to replace it, yayyyyyyy!!!!!!!!!), Charlotte made a batch of Fudge (she found the recipe in her Daring Book for Girls book) and I'm making cookies.  I actually haven't tried this recipe out yet, but it sounds very good and I like the fact that I can add things to the recipe - so I'm think of adding some Craisins and maybe some Chocolate Chips, but I may change my mind, lol.  The kids even have their lunches pretty much all made (their just waiting for the cookies to be finished).

Basic Cookies

1/2 cup shortening
3/4 cup brown sugar
2 eggs, beaten
1 tsp vanilla

1 cup white rice flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup nuts, raisins or chocolate chips

  • Preheat oven to 350˚F.  Grease cookie sheet.  Cream shortening with sugar, then add eggs and vanilla and mix well.  Mix in sifted dry ingredients, then add nuts, raisins, or chocolate chips.  Drop on greased cookie sheet.  Bake for 10 - 15 minutes.

I am so sorry to ask, but what is "mug up"??

I bet the toy reduction has been a long task. We did to do the same thing here.

Mug Up is a weekly get together that our homeschool support group started. Each week it is hosted by a family (and it changes locations each week), the only requirement for the host family is to have beverages for the guests to have (this is usually coffee).

The requirements for those attending are really simple, you bring brown bag lunches for your family and a mug to drink from (hence the name Mug Up). This is intended to make it easy on the family that is hosting - minimal clean up.

Mug Up is something that is kind of hard to get - it is so very simple that many people kind of scratch there head and go "I don't get why it is such a wonderful thing". For those that attend Mug Up they will tell you that it is a time where we can share our joys and our struggles with those who completely understand. It is a time for our kids to get together with other kids, my son likes to call it "All day recess", lol.

Many of us who attend Mug Up are from different school boards, use different curriculums and none of us homeschool in the exact same way/style. But the beauty of Mug Up is that none of that matters, we share what has been working for us, what hasn't been working and we are there for each other no matter what life throws at us.

Mug Up is an incentive program all on its own - my kids know that if they don't get their schoolwork done, then we don't go to Mug Up so they work really hard to get all of their assigned work done. =)

I don't know if you've checked, but Lindsay at www.passionatehomemaking.com has great recipes on gluten free goods.

PS: Make sure to watch the sugars eating this way. We had our son on a gluten/caesin free diet and found that because of all the rice it was making his sugars rise.

Iced Coffee Syrup

≈ coffee
≈ water
≈ sugar

***IMPORTANT***: you need a percolator style coffee pot to make this.
DO NOT use a drip style coffee maker to make this syrup!!!!!

* Make one pot of coffee, then discard the grounds.
* Add fresh grounds, percolate again, with the coffee as liquid, not fresh water.
* Do this three times.
* To the finished coffee mixture, add one half the amount of sugar (if you end up with 3 cups coffee mixture, add 1 1/2 cups sugar).
* Mix until sugar is completely dissolved.

* To use: add 2 - 3 tablespoons of syrup to a 10 oz glass of milk, stir to mix and enjoy.
