Christmas planning underway

Gosh this week is almost over already. I haven't been up to too much. Planning some things for Christmas which is fast approaching. I have been making some shopping lists.. I don't have too many people to buy for thankfully, but those I do buy for, I want to get them something nice.. even if it isn't something big/expensive.
I have a couple ideas for my mother in law.. I have tons of rubber stamps and she loves the cards I make, so I thought about some homemade notecards for her to send to her friends and to use as thank you's or whatever. I figure I can whip up a set of 10 or 15 for her and she will be tickled pink. And I also have fabric and the pattern to do a really cool wall hanging for her.. if I can get my stupid sewing machine to cooperate. =( It is a cheap little one and has never worked quite right.. I even thought about taking it somewhere to have it looked at as I do not have the money to buy a new one. I will take pictures of it as I go. It should turn out really nice.
We are expecting a bonus check in the mail any day now. That is what I will be using to do the bulk of my Christmas shopping done. Plus hubby has been working some overtime so we should have a couple really good checks coming in before Christmas. That makes me feel alot better.. I hate not being able to shop for Christmas.
I have really been contemplating getting a job of some kind. I am not sure what I would do with Courtney while I work, I don't have any family, both of my parents are gone and hubby's parents are too far away. I really wish I could come up with something I could do from home.. =( That would be ideal. I know a little additional income would help alot.. but working out the details is tough. I dunno, we'll see.

Peaceful Weekend

Not much happened around here this weekend.. it has gotten colder though. Yuck. I try to not go outside any more than I have to when it is this cold. lol It is so nice and cozy in here though, we have our wood burner going. I just LOVE that thing.. can't say enough good things about it.
Courtney had a long weekend, which is always so nice. There was an early dismissal on Thursday so she was home at 1:30 and no school on Friday due to parent/teacher conferences. I didn't have to go. I usually don't. She does very well in school. Usually makes the honor roll but missed it by a C+ grade this nine weeks. She was kind of annoyed. lol She has been on the Honor Roll consistently pretty much the last two years or so. She said she will definitely be able to bring that up, so next 9 weeks she will make it. I am glad she sets goals for herself and I don't have to remind her she needs to do well academically.
She got a good bit of cleaning done in her room this weekend. Her dad grounded her from the phone, TV and internet because it was such a disaster. But she is diligently working to get it cleaned. Once SHE says it is clean, I am sure I will go in and help her 'fine tune' it. She doesn't clean the way I do. lol And she wants it to be nice before Christmas because she wants some friends to come over during the break. Granted that is a month and a half away, but still, one needs all the time one can get.
I have a new project in my head. We have a very large entertainment center that holds our TV, VCR, DVD player, Playstation, movies etc.. well, both hubby and I are tired of looking at it. So we are downsizing to a very small TV stand. It is Kaitlyn and Dusty's old one, but very pretty wood. But I don't want to get rid of the big one, I think I am going to 'TRY' to put it in the computer room for storage. JOY!! I will have somewhere to put more pictures, my rubber stamp supplies that aren't in the stamp tower and my scrapbooking stuff and who knows what else. I am very excited. But it is going to be a job moving that monster.. it is very large and very heavy.
Jennifer and Lydia came over unexpectedly this evening. =) It was a nice surprise. Jen had a recipe to give me and every time we saw each other we both kept forgetting about it. lol But I have it now and we had a nice visit. She came over last evening for dinner. Lydie was with her dad for the weekend and Jen was all by herself.. she hates it when Lydia is gone.. so I invited her over for dinner last night. I made two big roasts with lots of potatoes, carrots and onions. She picked up some brown and serve rolls and an awesome two layer fudge cake. So we ate very well last night. lol And we just visited into the evening, well, til nearly 1 am when she had to go home.
Today was pretty quiet really. I didn't get a whole lot accomplished other than a few loads of laundry. =/ I need to clean out my kitchen cabinets... especially the ones with my pots and pans.. they are down on the floor and it just kills me to get down on the floor and have to try to dig around to find what I need. I know I probably have alot of pans in there that I never use, pushed way back and just taking up space.. I need to get them OUT of there.. I originally wanted to move all my pots and pans to a different cabinet or hang them or something.. but I think I am just going to try to separate the ones I use all the time, and put them right in the front of the cabinets, nicely organized so it isn't such a hassle trying to get them out.

A few pictures of the new kitten, Boo

Here are some pictures I have taken within the last week of the new kitten.. she is such a silly thing.. always into something.. it makes me laugh because she is so tiny! She doesn't look that small in the pictures though.. She can't weigh more than 2.5 lbs. I would guess. I don't see how she gets into half the things she does. She is so sweet now.. a little purr box. I wasn't sure at first, since she hadn't been handled much, but she has settled in quite well. =)
Picture #1~ She is laying beside a piece of wood by the woodburner. She LOVES crawling all over the woodpile and playing with the stray pieces of bark.
Picture #2~ In my Longaberger basket before I took the Halloween decor off of it. Mind you, it is on the kitchen table. Little brat.. lol
Picture #3~ She is sitting on top of the pumpkin I have waiting to make my Pumpkin Stew.. it is on the table also.

Recipe for Calico Beans from the blog of CasaNorthCoast

I just LOVE beans and this sounded so good and so EASY, I wanted to make sure I didn't lose track of it.
1-2 lbs ground beef
1 lb bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
1 T vinegar
1 T mustard
3/4 cup brown sugar
1/2 cup catsup
3 16oz cans of pork and beans
In a large frying pan cook bacon, ground beef, onion and bell pepper until ground beef is no longer pink. Combine with the rest of ingredients and put in a large baking dish and bake for 1 1/2 hours at 350 degrees.

I had no idea you could freeze EGGS!! Awesome!

I was just reading over a friends' blog, countrylife, and she has an entry about freezing eggs for later use in recipes. I LOVE this idea. She just cracked one eggs into ice cube trays, she says to be sure to add a bit of salt or sugar to each egg.. she didn't specify why though. *shrugs* She says once they are good and frozen you can just pop them out individually and add them all to a freezer bag or container to store them. She also had beaten a bunch of eggs together in a large bowl and poured them into a zip lock freezer bag to freeze until she needed them for scrambled eggs for a meal. Another ingenious idea. I love finding new, easier way to do things.
My only problem is, I don't HAVE a bunch of eggs. I want chickens so bad.. hubby still says no, they are too dirty. I would keep them in a little chicken yard though, off a coop/barn/building for them.. so it isn't like they would be all over the yard. Please pray that he will change his mind. Maybe if I promise to make him LOTS of deviled eggs he will allow it. =) We all love eggs, so I know it wouldn't be an issue of having too many, though I know nothing about chickens. =( But I DO have a friend that used to have them, so maybe she could teach me. *waves at Jen in case you read this* hehe
