Recipe for Crab stuffed Mushrooms

 Crab Stuffed Mushrooms

This is a hard recipe for me to write out as I have never really written it down—except for the ingredients. I just eyeball the amounts as I have been making this for 14+ years (I first made this up as a surprise appetizer for a romantic dinner I made for Mr. Steady while we were engaged.). . . . So upon making it you may have to make a few adjustments of your own.

2 -8 oz. pkgs fresh mushrooms, washed
1/3 to ½ cup sliced green onions (more or less depending on your preference)
1- 1.5 cups crab meat, minced
6-8 tbsp butter, cut up
1 to 11/3 cups fine dry bread crumbs*
2 cups shredded mozzarella cheese
*Note: for bread crumbs I take day old bread and run it thru my blender- about 3-5 slices for this recipe.

Wash mushrooms and remove stems, save stems. Place caps upside down in a dish (If microwaving- you may have to use two dishes in order to fit in all the mushrooms). Chop stems and add to a med. saucepan along with chopped onion and cut-up butter (start with 6 tbsp and increase if necessary). Stir in crab, bread crumbs and 1 cup of cheese. Cook until melted together. Spoon mixture into mushroom caps. *Reserve remaining cup of cheese to sprinkle on top of cooked stuffed mushrooms.
Oven Directions: Set oven to 425*- bake mushrooms for 8 to 10 minutes until heated through. Top with remainder of shredded cheese and cook an additional minute or until cheese is melted.
Microwave Directions: Place mushrooms in microwavable dish- cook on high for 4 to 5 minutes or until heated through. Top with shredded cheese and cook just long enough to melt cheese (I do 30 second intervals).
Serve immediately.
Cost breakdown: 2 pkgs mushrooms @ $1.19 each ($2.38), green onions 50 cents (one bundle- I didn’t use all of it though), crab meat was bought bogo- $2.00, butter- 24 cents (bought for $1.29/lb), bread crumbs- free, cheese- on sale for $1.50.
Total Cost for Crab Stuffed Mushrooms: $6.62.
This constitutes a pretty pricey appetizer here on the homestead- considering I often feed my family for around or just a smidge more than that for a whole day!

I am making this because I want to surprise Mr. Steady with a very special romantic meal just to say, “I love and appreciate you.” Here’s how I am off-setting that price- our steaks for this evening were a great markdown- $3.00 and the potatoes were free (garden) as well as the little lava cakes. So the bulk of our meal cost is the mushrooms. I'll be serving up little side dishes with topping for the baked potatoes (sour cream, chives, bacon & cheese). Since its only Mr. Steady and I eating there will be plenty of leftovers- which I will pack up for his lunch for the next couple of days. I am sure that when he opens the leftovers he will be reminded of our wonderful dinner (and the note I plan on slipping into his lunch box will be a helpful reminder too!).

My rock and biggest supporter. The glue that keeps the family sane. He is like deep, deep water- it takes a lot to see a ripple.

DD11- Our Maiden in Waiting- By the world's standard she's a 'tween'. By ours and the Lord's- this is the time of her years of preparation. She is eagerly learning what it means to keep a home and daily becomes more and more of a helper to her Mama.

DD8- Sassafras My Sassy middle child. She holds her own so sweetly and has such an empathetic heart. While real Sassafras is used for flavoring- She is that added spice of flavor to our family.

DS4- Mr. Conductor- The train aficionado in the family. He likes to think he's in charge and often is! He's also the biggest Oreo fiend in the family.
