Recipe: Breakfast Pizza

2 English Muffins- split
Scrambled eggs (make 2 servings)
2-4 Bacon Slices- cooked
4 Sliced Cheese
Directions: Lightly toast the muffins- top with scrambled eggs and 1-2 bacon slices (tear bacon apart to fit on top of eggs or use crumbled bacon). Place sliced cheese on top of your “pizza” and microwave for 20 seconds or until cheese melts.
Makes 4 single breakfast pizzas.
Cost Breakdown: Muffins purchased at Aldi’s- 26 cents, scrambled eggs (4 eggs, 2 tbsp milk) @ 35 cents, bacon slices “free” (free because I count the whole cost of the bacon when we cook it the first time- I don’t have this worked out to a per slice cost- we usually have bacon on Saturdays and I save a few slices for adding to breakfast recipes or salads- just crumble and store in closed container in the fridge)  and 4 slices of cheese for 28 cents.
Total Cost: $.89 for 4 breakfast pizzas
Note: As the kidlets get bigger I’m figuring I’ll need to double this recipe.
Also- I will often serve this with a side of fruit to round out their breakfast.
