Another recipe: Country Salisbury SteakCountry Salisbury Steak[Recipe adapted from kraftfoods.com] 1 ½ lb. extra lean ground beef (I use ground turkey) 1 pkg. boxed stuffing mix for chicken 1 ½ cups water, divided into 1 ¼ cup and ¼ cup ¾ cup chopped onion 1- 8 oz. pkg. fresh mushrooms, sliced ½ cup BBQ sauce Preheat oven to 375 degrees. Mix meat, stuffing, 1 ¼ water and onions until well blended. Shape into six ½ inch thick oval patties. Place on 15x10x1 inch baking pan. Bake 25 minutes or until cooked through. Meanwhile- spray large nonstick skillet with cooking spray. Add mushrooms and cook on med. high heat for 5 minutes or until lightly browned, stirring occasionally. Add BBQ sauce and remaining ¼ cup water. Reduce heat to low. Cook 1 to 2 min. or until sauce is heated through. Ladle sauce over patties and serve. Amy’s note: Ground turkey is leaner and more inexpensive than the beef and I find I like the taste just fine. For the BBQ sauce we used a hickory smoked BBQ sauce from Aldi’s. This version is a bit tangier than our reg. Salisbury steak recipe. Cost breakdown: 1.5 pounds ground turkey $1.34 (from Aldi’s). Stuffing Mix (Aldi’s) 69 cents. Onion is from our garden. Fresh Mushrooms purchased 16 oz. for $2.99, making it $1.50 for 8 oz. The BBQ sauces equals out to 18 cents for the half cup.
