The weather develops a hankering

When the weather begins to turn crisp and cool and the trees change into their autumn finery I get a hankering for soup.
A favorite quick soup here on the homestead is Roo’s Soup. It’s not a true homemade soup but like I said- it’s quick and super easy.

Roo’s Soup
15 oz. can green beans
15 oz. can corn
15 oz. can mixed vegetables
15 oz. can diced tomatoes
14 oz. can chicken or beef broth
Optional: add meat
Pour all ingredients into soup pot (do not drain cans) and bring to a boil- then simmer for a few minutes.
Serve with biscuits or homemade bread.
My favorite variations on this simple recipe: chicken broth/diced ham, chicken broth/chunked chicken (I like to cook an extra chicken breast when I’m cooking another chicken dish, then cut it into chunks and freeze it), beef broth/leftover shredded pot roast.
Another yummy alternative I stumbled upon . . . . adding leftover mac and cheese to the soup. It gives a cheesy flavor and adds pasta to the soup- Now, I like to [menu] plan mac and cheese for lunch the day I’m making this soup so that I can add the leftovers!
Cost breakdown:
[purchases made @ Aldi’s unless noted otherwise]

Canned green beans and corn- 39 cents each (x2)
Diced tomatoes- 45 cents
Canned mixed veggies- 35 cents
Broth- 39 cents
1 large chicken breast- cooked and chunked (75 cents- I purchase frozen chicken breasts- 10 breasts/bag when they are BOGO at our local grocery store)
Total cost: $2.72
Serve with biscuits and you’ve got a meal for 5 for under $5!!!
This recipe will serve my little family of 5 with enough leftover for Mr. Steady’s lunch the next day. Other times I take the leftovers and add a bit more broth and veggies and stretch the soup for another day.

Mr. Steady

My rock and biggest supporter. The glue that keeps the family sane. He is like deep, deep water- it takes a lot to see a ripple.

DD11- Our Maiden in Waiting- By the world's standard she's a 'tween'. By ours and the Lord's- this is the time of her years of preparation. She is eagerly learning what it means to keep a home and daily becomes more and more of a helper to her Mama.

DD8- Sassafras My Sassy middle child. She holds her own so sweetly and has such an empathetic heart. While real Sassafras is used for flavoring- She is that added spice of flavor to our family.

DS4- Mr. Conductor- The train aficionado in the family. He likes to think he's in charge and often is! He's also the biggest Oreo fiend in the family.
