WFMW- Cookies baked but not in ovenToday I thought I would share my chocolate turtle waffle cookie recipe- cookies without heating the oven- as it has been so blistering hot here (and pretty much everywhere else).I love cookies but I live in an old home w/o central air. We have an air conditioner unit that cools our living and dining rooms but we keep the kitchen closed off- so its hot in there and I don’t want to add to it by turning on the oven. Okay- no more chit chat- to the recipe: Chocolate Turtle Waffle Cookies 1 ½ cups sugar 1 cup butter, softened 4 eggs 2 tsp Vanilla 2 cups flour ½ cup cocoa powder ¼ tsp salt Turn waffle maker on and allow to “preheat”. Cream sugar and butter together. Beat eggs into creamed mixture, adding vanilla. Sift flour cocoa and salt together and mix into the creamed mixture. Spoon mixture into greased and hot waffle iron and cook 1-2 minutes. Now, I like to eat them as soon as I blow on them to cool them down a bit. My dad likes them with ice cream and my brother makes waffle sandwiches with the yummy fluffy butter cream frosting he gets at the local Amish store. We are a family well acquainted with the term “to gild the lily”. I’m not sure how many waffles this recipe makes because, *ahem* to be honest, we eat at least half of them before the entire batch is done cooking. And that, dear readers, is my tip for the day- yummy cookies without heating up the oven and the house and making everyone even more miserable than they already are.
