WFMW: Freezer Tip

It could just be that everyone else knows this wonderful simple and oh-so-very-helpful freezing technique.
It all started with me wanting great breakfasts for my children that go beyond cold cereal but I am a lazy “
breakfast cooker”- meaning I love for us to have pancakes and waffles but I don’t want to get up any earlier to make them.
I happen to
really enjoy my sleep in the morning.
So we decided to try for making pancakes and waffles on the weekends and freezing the delicious efforts. We found it hard to chisel the pancakes apart without leaving pieces of them stuck to the others.
And I hit upon an idea.
I laid the cooled pancakes out on cookie sheets in single layers and put the cookie sheets in the freezer. A couple hours later, when they were frozen to hockey puck status, I worked them off the cookie sheets with a spatula and put them in large Ziploc freezer bags. I do the same thing with waffles. Currently, I have not tried it with French Toast.
I have used the same trick with onion too- dice it, lay a single layer on the cookie sheet, freeze and bag and put back in freezer.
Cookie dough is of course another one- scoop onto the cookie sheet just as if you were putting it in the oven- but put it in the freezer instead. So, instead of freezing a tub of cookie dough I have frozen individual cookies ready to pop in the oven. I find I actually make cookies when I do this.
Plus this had the added bonus of making me feel oh-so-ultra-efficient.

on the cookie dough - I use wax paper (taken from inside cereal boxes) and make a "roll" of cookie dough and freeze that. it takes less room than a cookie sheet in the freezer. When it is frozen I take my chef's knife and cut "cookies" and then bag those.

too bad I never actually BAKE those frozen cookies.... (I LOVE LOVE LOVE cookie dough, and frozen bite-size cookie dough just never lasts long enough to bake.....)

Wax Paper

If you don't have room in your freezer for a cookie sheet, what I do is use wax paper in between each pancake/french toast/ waffle and this works well.

That's called 'flash freezing,' btw! I need to get some breakfast foods made for the freezer, too. French Toast does freeze beautifully, btw! Also, you can make your own breakfast biscuit sandwiches. Just layer some cooked bacon, egg (scrambled is probably easiest) and a slice of cheese on a biscuit and wrap it up tight. I tried this recently and both of my younger boys loved them! Oh, by the way, I'm "Mom2fur" and my blog is sortafrugal.blogspot.com.

Ok, I'm sorry, help me. My mommy brain is not grasping this. After you freeze them on the cookie sheet you can put them all in one ziplock and they won't stick? Is that what you are saying?

Yes that's exactly what I'm saying! Its so easy!
Our freezer has a "quick freeze" button so when I put them in on the cookie sheet I hit that button and come back about an hour later and pop them off the trays and put them in large baggies.
There are other great tips here in the comments too if you don't have enough room in your freezer for cookie sheets.
I plan on doing this with pumpkin waffles real soon!

Mr. Steady

DD11- Our Maiden in Waiting- By the world's standard she's a 'tween'. By ours and the Lord's- this is the time of her years of preparation. She is eagerly learning what it means to keep a home and daily becomes more and more of a helper to her Mama.

DD8- Sassafras My Sassy middle child. She holds her own so sweetly and has such an empathetic heart. While real Sassafras is used for flavoring- She is that added spice of flavor to our family.

DS4- Mr. Conductor- The train aficionado in the family. He likes to think he's in charge and often is! He's also the biggest Oreo fiend in the family.
