The plums are officially ripe! That doesn't mean we haven't been eating them for a week already, but they are all the way ripe now. Plums are my favorite!!! The purple plums are so big and juicy. The yellow ones are sweet and juicy, too, but a little more sparce than we are used to. Normally we provide all our friends with boxes of plums... this year there aren't very many to give away.
We are enjoying a little more variety from the garden now. There is plenty of everything.
Today we were finally able to make hot eggplant sandwhiches for lunch. The whole family is crazy about them. We had a nice big purple eggplant and a medium sized white one. We sliced and breaded the eggplant and broiled it with peppers and herbs. Did one zucchini the same way and we discovered they are good that way as well. Vanessa took a picture of them fresh out of the oven.
The kids made lunch and took great pride in only using food from the garden. We had greenbeans cooked with onions and tomatoes, chard, cucumbers, and the eggplant sandwhiches, of course, we did not grow the bread... or even make it. It is organic Silver Hills bread made in our friend's bakery in Canada with sprouted grains. We didn't grow the spreads, either. However, the tomatoes and peppers and cucumbers and all the counts grew in our garden. :-)
Christina was feeling creative last night. She had saved all the cups from the smoothy we had at the hospital a couple days ago. She got out her chalk board and wrote out a list of possible fruit combinations for homemade smoothies and then she took orders. She used soy milk and fruit off the trees and some blueberries and strawberries from the freezer. They were good. She even took pictures of her creations. Looks good enough to eat, doesn't it? She used a little whipping on the top to make them pretty.
I am trying to debate whether I pick the rest of the cabbage or leave them a bit longer. Sometimes they split if you leave them too long and then water them. It's already happened. The last one was 7 lbs. Just not sure how soon I have to pick them.
I best get going. We have a lot of peaches to put in the freezer today before I can take the girls swimming.
