Bread and the Kitchen Aid

I got a Kitchen Aid from my wonderful Hubby for Christmas, and I was wondering if any of you fine ladies mix and knead your bread with it.  Is it better done by hand, and if the Kitchen Aid does work well, would you be so kind as to share recipes.  I tried to make bread rolls today, however, I did something wrong.  I don't know if I need to soak the yeast first still, or how long to run the mixer.  Anyhow, any advice would be wonderful!

Actually any recipes you use your Kitchen Aid for would be fantastic.  If you post them on your blog, just let me know!

Potato Salad

Well, the Potato salad turned out to be a hit, so I thought I would post the recipe:

6 Potatoes (cubed and boiled until almost done)

3/4 to 1 cup mayo

2 long spuirts mustard

2 celery stalks

1/2 can olives (diced)

1/8 cup diced onions (optional)

1/8 cup diced pickle (optional)

The secret ingredient, thanks to my Dear Friend Raquel...drum roll please...

1/2 packet of Ranch Seasoning mix.

Cool potatoes, and then mix all ingredients together. Refrigerate at least 2 hours.   No need for salt or pepper, it is delicious as is!

Salsa Chicken

Salsa Chicken

This is one of the easiest recipes and it is so good!  I make my own salsa, but it is my friends recipe, so I will get her permission to post it.  Until then, I started out using mild Pace Picante Sauce.

Ingredients:

1 c. rice

1 c. water

6 large chicken breasts

1 jar salsa

Preheat oven to 350.  Grease casserole dish, and spread rice evenly on the bottom.  Pour in water, and then place chicken breasts on top.  Cover the top of each breast with salsa.  Cover with tin foil and cook for 25-30 minutes!
