Saltine Chocolate Pieces

          • 1 sleeve (about 37) saltine crackers
          • 3/4 c. brown sugar
          • 1 c. butter
          • 12 oz. (2 cups) semi-sweet chocolate chips
          • 3/4 c. chopped nuts *I used walnuts

Preheat oven to 400*F.  Line a 10 X 15" cookie sheet with foil; spray very lightly with cooking spray.  Cover cookie sheeet with saltines.  Boil sugar and butter for 3 minutes.  Pour mixture over saltines and spread evenly.  Bake at 400* for 5 minutes.  Remove from oven.

Sprinkle with chocolate chips.  Let set 1 minute, then spread melted chips with spatula.  Sprinkle 3/4 c. chopped nuts over this and press down lightly.  Cut on diagonal immediately or cool until firm, then break up; pieces can be frozen.

Yields: 30 pieces

Pie Filling Delight

1-8 oz. Cool Whip

1-8 oz. pkg. cream cheese

1 c. sugar

1/2 t. vanilla

1 stick margarine

3 c. graham cracker crumbs

1 can pie filling (your choice)

1. Melt the margarine & mix with crumbs.  Pan into 9 X 13" dish.  **Save a few crumbs for topping!

2.  Mix cream cheese, sugar, & vanilla until well beaten.  Add Cool Whip. 

3.  Pour mixture on top of crumbs.

4.  Pour pie filling over top Cool Whip mixture.

5.  Sprinkle reserved crumbs on top.

Dirt Pudding

Our local library has a teen program that takes place on Thursdays @ 11.  My oldest usually goes by herself because she doesn't want my youngest tagging along, although both are old enough to attend.  But you know, you have to pick your battles, right? 

Well, since the oldest is at camp I let the youngest go this week.  They were having a movie/snack party.  Everyone was supposed to bring a "buggy" snack and then they were going to watch a "buggy" movie.  So yesterday morning I had to make a mad dash to Walmart to get the ingredients for her "buggy" snack.  I made some dirt pudding for her to take along.

Here's the recipe:

Dirt Pudding

 

Dirt Pudding

1 pkg. (4-serving size) vanilla instant pudding mix

1 pkg. (4-serving size) chocolate instant pudding mix

4 c. milk, divided

1 c. thawed Cool Whip, divided

Oreo cookies, crumbled

Gummy worms

 

1.  Prepare vanilla & chocolate pudding mixes separately with milk as directed on packages.

2.  Let stand 5 minutes.

3.  Gently stir 1/2 c. Cool Whip into each bowl of pudding mix.

4.  Sprinkle Oreo crumbs into bottom of bowl or bucket.  Enough to cover bottom, about 1/2" thick.

5.  Pour vanilla pudding mix over top of crumbs.

6.  Sprinkle another 1/2" of Oreo crumbs over top of vanilla pudding.

7.  Pour chocolate pudding mix over top of crumbs.

8.  Sprinkle another 1/2" of Oreo crumbs over top of pudding.

9.  Add worms & a shovel! 

10.  Refrigerate at least 1 hour before serving.

 

There were only 5 kids that showed up this week.  Most likely because of it being the 4th of July weekend.  Katie won a coupon to Arby's for "The Best Tasting"! 

It was good!

My Secret Recipe

SHH!!!  Don't tell my husband that I have secretly replaced his favorite coffee creamer with a homemade version!  LOL!

My husband loves the French Vanilla Coffee-Mate Creamer (liquid) but since milk prices have gone through the roof so has this gotta-have-it coffee creamer.  So...I went searching for a substitute online.  I mixed up a batch and poured it into the old Coffee-Mate bottle and he never noticed a difference!  YAHOO!  It is SO much cheaper!

So here is the recipe in case you want to be sneaky too!

French Vanilla Coffee Creamer

1 (14 oz.) can sweetened condensed milk

1 1/2 c. milk (I used skim)

1 T. vanilla extract

Combine in blender.  Pour into old name-brand coffee creamer bottle (yes, I HAVE to disguise it!) 

Store in fridge approximately 2 weeks.

Fruit Nachos

Besides exercising to lose weight, eating right also comes along side so in my attempt to do both I am having to learn how to grocery shop all over again plus make better, healthier foods. 

Here is what we had last night for a little dessert:

 

Fruit Nachos

1 pkg, flour torillas

1/2c. sugar

1t. cinnamon

1 container of yogurt, flavor of your choice (I used strawberry!)

sliced fresh fruit (nectarines, peaches, bananas, kiwi, strawberries, blueberries,etc..)

Preheat oven to 375*.  In small bowl, combine sugar & cinnamon.  Cut each tortilla into 6-8 wedges.  Place wedges, in a single layer, on baking sheets.  Spray wedges with cooking spray.  Sprinkle with sugar mixture.  Bake 5-7 minutes or until wedges are light brown and crisp.  CHECK AFTER 5 MINUTES!  (I burnt ours at 7 minutes!)  Remove chips to cool.   Mix yogurt with fruit and dip away!
