• Monday, February 11, 2008 - Menu Monday
Skating in under the wire with this one, but at least it's still Monday! :) The good news is that you get an immediate review of the first recipe! Lovely!
Sunday -- Out to lunch and popcorn for dinner
Monday -- Mini Canneloni Bake with dinner rolls (this was good, but I'd amend the recipe to just one box of chopped spinach, 1lb of ground beef, and double the white sauce)
Tuesday -- Nachos (with leftover taco fixin's from last week)
Wednesday -- Fajitas
Thursday -- Potato Soup in the crockpot, some sort of fancy Valentine's dessert... any ideas??
Friday -- Homemade Pizza
Saturday -- Leftovers |

• Tuesday, February 5, 2008 - Menu Monday
Well, here I am late again with my menu plan... but at least I've stuck to it so far! : )
Sunday -- Roast, Veggies, Salad and Garlic Bread (this roast was sooooo good!! I'll be using the rub again for sure!)
Monday -- Fish Sticks, Froz. Veggies, Cornbread Stuffing and Salad
Tuesday -- Swedish Meatballs over Egg Noodles and Salad
Wednesday -- Beef Barley Soup (with leftover roast)
Thursday -- Grilled Cheese Sandwiches with leftover soup
Friday -- Homemade Pizza
Saturday -- Tacos
Yes indeed... it looks like I'll be having grilled cheese sandwiches for my birthday dinner. ;p We don't have plans for anything fancy because building a house is *expensive*, plus the best birthday present ever!! We're hopefully about 4-6 weeks away from being done and then I can really start going crazy with garden planning and chicken coop building! |

Well, this should actually be called Menu Tuesday, since I'm a day behind, but here it is anyway...
Monday -- finally made that Lemon Chicken with homemade Egg Rolls, yum-o!!
Tuesday -- Baked Potato Bar
Wednesday -- Leftovers before church
Thursday -- Date Night with hubby (kids will be at Grammy's for a week)
Friday -- probably Date Night leftovers... who can eat all the food they give you at restaurants these days? |

My menu for the week is still a little up in the air as I've been sick and haven't been shopping for over a week. But in the interest of purposeful grocery shopping and managed meal planning, here goes...
Monday -- Tacos with all the fixin's
Tuesday -- Chili Dogs
Wednesday -- Nachos with leftover taco stuff
Thursday -- Spaghetti, Salad and Garlic Bread
Friday -- Amy Jo's Lemon Chicken with Rice and Egg Rolls
Mmmm... can't wait to try Amy Jo's Chicken recipe, we are big fans of lemon chicken around here, but I've never tried to make it at home. I'll let you know how it goes! |

So, we had a couple of surprise events come up last week and so I'm recycling a few of my dinners as we never actually made them. Makes the mental job easier this week!
This week:
Tuesday -- Stir-Fry, Rice, and homemade Egg Rolls
Wednesday -- Tuna Casserole and Salad
Thursday -- Leftover Soup (it's Homelink day)
Friday -- Homemade Pizza
Now, I'm big tuna casserole fan, but I found a recipe that I actually enjoy. It was originally on the back of the egg noodles from Safeway and I discovered it one time while looking for meal ideas, and it has lived in my recipe box ever since. Did you know that recipes on the back of products are almost always fantastic? Who knew? I guess they would want their product to taste good, so it makes sense. Anyway, here's the recipe:
Tuna Casserole
12oz egg noodles, cooked and drained
1 can cream of celery soup (or homemade equivalent)
3/4c milk
1c sour cream
1/4c chopped onion
1/4c chopped celery
1 can peas, drained (or use frozen)
1c cubed cheddar cheese
1 can tuna, drained
Combine soup, milk, and sour cream. Add in veggies, cheese, and tuna. Pour over noodles in pot, stir together, then pour into 3qt. baking dish. Bake, uncovered at 350 for 30 minutes. Sprinkle some cheese on top when finished and serve! |

My first attempt at a regular posting... to both keep me on track and share menu ideas with my readers... if there are any. ;)
This week:
Monday -- Lasagna, Salad, homemade garlic bread
Tuesday -- Stir-Fry, Rice, and homemade Egg Rolls
Wednesday -- Potato Soup and Rosemary Bread
Thursday -- Leftovers (it's Homelink day)
Friday -- Homemade Pizza
In case you're interested...
Homemade Egg Rolls
1 pkg tri-color coleslaw mix (just cabbage, no dressing mix)
1 pkg or 2 lg handfuls of bean sprouts
1-2 green onions (chopped fine)
1/2 can water chestnuts (chopped fine)
small piece of ginger (grated or chopped very fine)
1 egg
soy sauce
chopped ham, chicken, shrimp (if desired)
Egg Roll wrappers
Mix coleslaw with bean sprouts, green onions, water chestnuts, ginger, and meat (if added). Sprinkle with some soy sauce, a couple of teaspoons. Separate egg, add egg white to filling mix and put egg yolk in small bowl with a splash of water to use as wrapper "glue" later. Stir filling to distribute egg white and soy sauce.
Place one wrapper diagonally in front of you. Place one heaping tablespoon of filling on center of wrapper, fold up like an envelope and roll until you have just the tip (flap of envelope) exposed. There's usually pictures of this on the back of the wrapper package if it sounds confusing. Dip your fingers in the yolk mixed with water, run them along the edge of the flap and then roll the rest of the way. Continue for rest of wrappers.
Fry in hot oil until the wrapper is bubbly and golden brown. Drain on paper towels and eat with various dipping sauces.
If you have leftover filling mix you can make easy egg foo yung. Just add filling to scrambled eggs before cooking and cook like patties. Or use for fried rice. Or go buy more wrappers and make more egg rolls! :)
