Pineapple Candied YamsOne of my favorite recipes (and there are many wonderful ones) that my mother-in-law gave me is Pineapple Candied Yams.
1/2 cup sugar 1/2 cup brown sugar 1/2 tsp nutmeg 1/4 tsp. ginger 1/2 tsp lemon peel 3/4 cup pineapple juice 1/2 cup pineapple chunks (we love pineapple, so I use the whole can) Bring all ingredients to a boil. Pour over already cooked yams. Bake unconvered for 20-25 minutes basting occasionally with sauce to glaze yams. I hope you enjoy! HAPPY THANKSGIVING EVERYONE! Taco Soup RecipeLast night I tried this recipe! It was so good! :) 1 1/2 lb ground beef 2 cans diced tomatoes drained 1 can Rotel tomatoes (with green chilis) 2 pkgs taco seasoning mix 2 cans pinto beans rinsed 2 pkg ranch dressing mix 2 pkg ranch style beans 2 cups corn (frozen or fresh) 2 cans of water Brown ground beef and drain. Add other ingredients and simmer for 30 minutes Serve with cheese, sour cream, tortilla chips and cilantro! This served 8 people plus we have at least 1/3 pot for leftovers. It is very filling! :) I always like to find some easy recipes that will fill a crowd! This is now one of my favorites!
Grandma's Potato Soup Recipe
Cut about 4 peeled large potato’s into two or three parts and cook until soft. Drain water off. Mix one heaping tablespoon of flour with about ½ cup cube soft melted butter and add to hot potato’s. Mix together and then add one quart milk. Cook until it thickens slightly (5-10 minutes). Salt and pepper to taste. Approximately 45 minutes total time. Top with shredded cheese and crumbled bacon! This recipe feeds approximately 4 people. I have found that it worked better using 2% milk than the nonfat that we usually use. It thickens better! :) ENJOY!
******** This recipe was my Grandma O's. She passed away almost 8 years ago. I miss her greatly! She was a hard working, family loving, God fearing, praying woman! She prayed for her family every day. She shared Jesus with all who would let her, and even with some who didn't want her to, although those were her brothers.
Grandma O's Meatloaf Recipe1 lb ground beef 1 small onion, chopped 1 egg 1/4 cup ketchup 6-8 crushed crackers (I prefer wheat crackers, but the original recipe called for soda crackers) pinch of salt small amount of pepper pinch of oregano Mix all ingredients together and place in a pie dish. Mold the meatloaf in a circle leaving 1 inch gap between the side of the dish and the meatloaf. Then fill the gap with water (about 1 inch or so). Bake at 375 for 45 minutes. Your meatloaf will be moist and flavorful! :) Thanks Grandma! I look forward to seeing you again in heaven. I miss you and love you! |
