Grandma O's Meatloaf Recipe

05:40, Tuesday, June 5, 2007 .. Posted in Recipes .. 2 comments .. Link

1 lb ground beef

1 small onion, chopped

1 egg

1/4 cup ketchup

6-8 crushed crackers (I prefer wheat crackers, but the original recipe called for soda crackers)

pinch of salt

small amount of pepper

pinch of oregano

Mix all ingredients together and place in a pie dish.  Mold the meatloaf in a circle leaving 1 inch gap between the side of the dish and the meatloaf.  Then fill the gap with water (about 1 inch or so).  Bake at 375 for 45 minutes.  Your meatloaf will be moist and flavorful!  :)

Thanks Grandma!  I look forward to seeing you again in heaven.  I miss you and love you!

Hey Debbie, this recipe sounds great, but I didnt understand about shaping it. Do you shape it into a ball, or a circle (like an inner tube)? Do you put the water in the center of the inner tube, or around the outside edges? I know Im getting technical, but I dont have a good meatloaf recipe, and this is the ONE dish that Daves mom hasnt mastered. LOL

Take care, and glad to see that you found your way over to my neck of the woods.

Shaping the meatloaf

I am sorry, I just saw your comment and question! :)

Basically, shape the meatloaf in a ball and place in a pie plate. I usually help flatten it with a fork and leave room on the sides. So, the water only goes around the outer part of the meatloaf. Does that make sense? It's so hard to word.....but no water in the middle of the meatloaf. It is formed into a circle but no hole in it.

I hope you enjoy it. I know that those who have tried this recipe have loved it.
