Today I spent about 2 1/2 hours canning peaches! I think they turned out pretty well, but I guess we won't really know until we eat them. Anyway, all six quarts sealed correctly.

The peach canning had a couple of hitches. I started out by laying out everything I thought I might need. Just as I started the process, one of the kids had a breakdown and threw a temper tantrum. Not wanting to let something like that go no matter how busy I am, I stopped what I was doing and dealt with it. But I wasn't very far into the canning process so I don't think anything was the worse for wear.

Cutting the peaches and taking out the pit was an art that I mastered about half way through, so some of the peaches aren't in perfect slices. And after everything was over, the peaches floated to the top of the jars. I'm told that won't affect the taste, even if is does look a little odd.

I was surprised to see that 10 1/2 pounds of peaches (uncut) only made six quarts! I'm going to try to get some more peaches this weekend and do this again.

I'm hoping that tomorrow I'll have time to try my hand at pickling some cucumbers!

they sure look yummy !!! I picked figs off my young tree which so far only have given me a dozen of figs. But my friend offered for me to get figs off her tree for preserves...Yes, indeed, figs are my Favorite fruit....debbie

I haven't canned any peaches... I have made up some peach butter and I freeze peaches usually when I can find them on sale. I just usually cut em up and put a little of that fresh fruit on them and put them in a freezer bag and thats it. Your canned ones look great! Well done!! :)
