16 ounce pkg. bacon, crisply cooked and crumbled

1 tomato, chopped

1/2 cup onion, chopped

2 cups mayo.

bread, cubed

 

Combine all ingredients except bread, mix well and chill. Serve with cubed or sliced bread for dipping.  Makes about 4 cups



Peanut Butter-Sunflower Sammies

My kids always loved these!!

 

1/2 cup creamy peanut butter

1/4 cup carrot, shredded

2 Tbsp. sunflower kernals

2 Tbsp. raisins

2 Tbsp. honey

8 slices whole-wheat bread

 

Combine all ingredients except bread in a bowl, mix well.  Spread mixture on 4 bread slices, top each with remaining slices.



Tomato Pie

Tomato Pie

 

4 tomatoes, chopped

1 onion, chopped

10 to 12 leaves fresh basil, chopped

9 inch pie crust, baked

1 c. mozzerella cheese, shredded

1 c. chedder cheese, shredded

1 c. mayo

1/2 c. grated prmesan cheese

 

Layer half of tomato, onion and basil in pie crust, repeat layers. Mix mozzerella and ceddaer cheese with mayo.  Spread mixture over top of pie, top with parmesan cheese. Bake at 350 degrees for 50 - 60 min. Let stand 15 min. before cutting



Sweet Fruit and Cream

4 oz. cream cheese, softened

2 c. plain yogurt

3/4 c. quick cooking oats, uncooked

3/4 c. chopped pecans

1/2 strawberries, sliced

1/2 grapes, halved

1/2 c. flaked coconut

1 banana, sliced

1 apple, chopped

2 tsp. lemon juice

3/4 c. whipping cream

sugar to taste

 

In a mixing bowl, blend together cream chesse and yogurt.  Using a electric mixer, beat at med. speed for 2 min. or till well blended. Stir in the oats, pecans, strawberries, grapes, coconut, banana, apple and lemon juice. set aside.  In a large chilled mixing bowl, combine whipping cream with sugar. Beat at med-high speed till soft peaks form, fold in fruit mixture.



Pie Crust

This is the best pie crust I have ever used!!  But remember to roll it out between 2 pieces of wax paper or you will never get it off the counter! It is so flaky!!

 

3 cups flour

2 cups shortening

1/4 cup sugar

1/2 cup water

pinch of salt

 

Mix everything together and roll out!! Makes 1 double pie crust or 2 single crusts!
