• Saturday, November 17, 2007 - Tropical Sunshine cake
This cake is so good. I found it on the internet a couple of years ago.
1 pkg. yellow cake mix
1 can (12oz) evaporated milk
2 lg. eggs
1 can (20oz) crushed pineapple in juice. Drained(juice reserved), divided.
3/4 c. sifted powdered sugar
1 c. flaked coconuts, toasted
1 container of cool whip
Preheat oven 350. Grease a 13x9 baking pan. combine cake mix, evaporated milk and eggs in lg mixing bowl. Beat on low speed for 2 mins.. Stir in 1 c. pineapple. Pour batter into prepared baking pan. Bake 30-35 mins.. Cool.
Combine sugar and 2 TBSP of reserved pineapple juice in small bowl. Mix until smooth. Spread over warm cake, sprinkle with coconut and remaining pineapple. Cool completely. Top with cool whip.
