One of our Wheat Bread Receipts

   I've been asked by many folks for this bread receipt so here goes:)

Whole Wheat Bread
3 cups coarse ground wheat
5 1/2 cups, whole wheat flour
5 tsp yeast
6 1/4 cup water
1/2 cup honey
1/3 cup canola oil
3 T ground flaxseed (optional)
5 tsp salt (I don't use salt)
7-8 cups white bread flour

Mix, the coarse-ground wheat, whole-wheat flour, yeast and water in a large bowl. Cover and let rise for six hours. After rising stir in the rest of hte ingredients, except for the white bread flour. Add the white bread flour 1 cup at a time, stirring with a heavy wooden spoon until the dough becomes too thick to stir. When too thick to stir, knead the dough, adding the remainder of the white bread flour.
Place in oiled bowl (keeps from sticking to the bowl) and cover with damp towel and let rise until it doubles (approx 1 1/2 hours).
Sprinkle a little white flour on the table, punch down the dough and turn out on table. Form 5 medium sized or 4 large loaves and place on cooking sheet. (5 fit with one on each end and three lengthwise in the middle)
Make three cuts in the top of each loaf. Let the loaves rise in a warm place until a dimple made with our finger won't bounce back.
Bake at 375 for about 40 minutes depending on the temp of your oven. Sometimes I have to leave them in a little longer.
After removing from oven separate loaves from each other and place on cooling rack for 6 hours or overnight. After they are done cooling, wrap in waxed paper and foil to soften the crust.
These freeze well and are nice and dense breads great for sandwiches and anything else:) If you are on a lowcarb diet you can slice very thin and it will still hold up as a sandwich bread:)

   I pray you enjoy this receipt. It's very tastey:) You can also add a cup of ground flax seed to it if you like. It's one of those breads you can add more whole grains if you want it (rolled oats, wheat hearts, etc).
