Fermented Foods

I have a question about sauerkraut. Exactly what are the nutritional benefits of this and why is it so good for you. That was kinda redundant but I was wanting some information an this.

I have a busy day today. Friday is my usual try to get everything done day. I like to do this so we can have the week-end to do what we want to do. Which usually includes just more of the same of what we do on FridayHAHAHA!The sun is shinning today . I think I am going to be brave and get my hanging baskets of flowers and ferns today. Surely we won't have any more cold weather! At least not like last week!  Time for spring.! Everyone have a great day! Love, Tina

Also, the Maker's Diet talks a little about the benefits of fermented foods. I've been hearing more and more about this lately. I think the last Mother Earth News had a couple of recipes in there.
