Friday on the Homestead

  We woke up to very cold temps. I think it was 13. Brrrr! The sun is shining though so that makes for a nice day! I have some errands to run in town  and just the usual Friday cleaning and cooking. I love to cook special things on Friday because everyone is ready to relax and just enjoy being at home. I will post the spinach and cheese quiche recipe. It is so good. I got this recipe from my friend Katie.

 

Spinach and Chesse Quiche

1 9inch deep dish pie shell

6 eggs beaten

3/4C frozen chopped spinach,thawed and drained well

1/2C shredded cheddar,colby,montery jack or combination

1C half and half

2T minced onion flakes

1/2tsp salt

1/2tsp. crushed oregano

Brush inside of pie shell with a small amount of beaten eggs. Prick bottom and sides with a fork and bake at 425 for 5 minutes. Remove shell from oven and reduce to 350. Stir together spinach and cheese and put into pie shell. Add remaining ingredients to the beaten eggs and mix well. Pour over spinach and cheese and bake 30-35 minutes or until knife inserted in center comes out clean
