We found that using hard red wheat made things a bit too 'wheaty' for us, so we started using hard white instead (Golden 86 or Prairie Gold) and that had a much lighter wheat taste for our white-bread-raised taste buds :o)
We use it in everything now, except gravy. For some reason, my husband simply doesn't care for biscuits and gravy with wheat flour at all. Oh well...change comes slow sometimes!

We use soft white wheat in our cookies, and hard white wheat in all our yeast breads. The soft white wheat isn't as strong as the hard white wheat, so we end up making all of our cookies, pancakes, muffins, etc...with the soft white wheat. It all ends up tasting soo good!
Fish taco's sound good, I have never had them before.
