Blackbean-and-Corn Salad
1 can sweet corn (tonight to be a little different I'm using the kind with bell peppers added.)
1 can black beans
cilantro to taste
1 small onion (i prefer yellow)
Salt and Pepper to taste
Drain the canned veggies and place in a bowl. Chop onion and saute with a little butter until you can see through them. Place onions in bowl. Chop desired amount of cilantro, and add to bowl. Salt and pepper to taste. Mix, and chill.
This dish is really good as a side, or as a topper for chicken breasts or in tacos or as a dip! Yum!!!
