Pumkin Bread
The house smells sooo good right now! Tomorrow our oldest is on "snack duty" at school. (He is in the 4th grade and they eat last lunch, the teacher is nice enough to allow snack to be provided... keeps their brains from being completely distracted by growling tummies half of the morning!) Anyway, in the spirit of Thanksgiving I baked up Pumpkin Bread. I make 4 loaves at a time every time I make this.... it freezes well so while I have the mess and oven going I might as well make 4. This is my favorite recipe. ENJOY!
Big Batch Favorite Pumpkin Bread
7 cups flour 2 cups white sugar
4 tsp baking soda 2 cups brown sugar
3 tsp salt 8 eggs
4 tsp cinnamon 2 cups oil (or use applesauce)
2 tsp nutmeg 1 1/3 cup water
4 cups pumpkin (2 small cans)
3 tsp vanilla
Sift dry ingredients together. Mix pumpkin, sugars, water, oil, eggs, vanilla together. pour into dry mixture and mix well. Pour into 4 greased loaf pans. Bake in preheated 350 degree oven for 1 hour - 1hour and 15 minutes or until toothpick inserted in middle of loaf comes out clean. Cool BEFORE removing from pans.
