Yummy!!!
Yummy!!!
That just about sums up my last few days!!!
We celebrated Easter with a trip up north
to my Aunt and Uncles. My Uncle is a pastor
and we attended their chuch. It was a nice
service... great message to remind us of the
gift Jesus has given us!!! A gift we don't deserve
in any way shape or form!!!!!!!
Then we went to their house for lunch. My
Grandmother is back from wintering in TX
and it was the first time we have seen her!
My sister, Melissa, and her family were also there. It
was a fun time and we had FANTASTIC
food!!!! YUMMY!!
Yesterday I did my BIG monthly grocery
shopping trip... now I will just have little
runs for milk and produce. When I got
home I prepared a new recipe that was
given to me by a friend. She served it to
me a few weeks ago when she had my
children and me over for lunch.... YUMMY!!!
It was easy to fix and my 3rd grade son
loved it so much he asked to take it
in his lunch!!! He really tends to like
things that most kids aren't sure about
and doesn't eat things like Apples and
Bannanas!!!!! Oh, well.... the soup
was a hit and I had a loaf of home
made oatmeal bread in the freezer that
I pulled out to go along with the soup!
I will be making this again.... Next time
using my crock pot for extra ease!!!

Country Mushroom and Sour Cream Soup
Ingredients:
1 pound FRESH mushrooms, finely chopped
(not canned)
3 carrots... diced
1 large potato peeled and diced
1 large onion finely sliced
olive oil
6 (or more) cups of water
1 chicken bouillon cube
salt and paprika to taste
1 cup sour cream (I used plain yogurt)
1) Prepare Vegetables. Heat oil in soup pot.
Saute veggies for 3-5 minutes.. stirring.
2)Add water and bouillon, and cook slowly,
covered, over medium heat for 30-40 minutes.
(At this point you could put it in the crock pot)
3)Add the sour cream, salt and paprika. Stir
and mix well and simmer for additional 10 minutes.
Serve Hot.
Bread and salad and the meal is complete!!!
