Hasty Pudding
YUM!!!! I love CHOCOLATE!!! My children also love
chocolate, but by far my hubby is the BIGGEST
chocolate fan of our family!!! He is worse than any
woman I have ever met....... He HAS to have chocolate
everyday!!!! LOL!!!
Anyway, I just made my second batch of this recipe.
I actually double it (family of 6) and I figure it costs me
about $1.20. It is EASY and YUMMY!!! I am also
getting some calcium in with our treat!!!
Hasty Microwave Chocolate Pudding
(from allrecipes.com)
1/2 c white sugar
1/3 c unsweetened cocoa pwd
3 tbls cornstarch
2 c milk
2 tsp vanilla
Directions:
1) In a microwave safe bowl, wisk together the sugar,
cocoa and cornstarch. Whisk in milk a little at
a time so the mixture does not have any dry lumps.
2) Place in the microwave, and cook for 3 minutes on high.
Stir, then cook at 1-2 minute intervals, stirring between cooking
times until shiny and thick. Stir in Vanilla.
3) Place a piece of plastic wrap directly on the surface of
the pudding to prevent a skin from forming. Chill and
serve cold.
***Now for a tip that my mother taught me when I was
growing up (I am blessed to come from a long line of
great cooks who took the time to teach me!!!)
Place pudding bowl inside a large bowl that has cold
water in it (can add ice to make it even colder). This
helps cool the pudding much faster and saves the
fridge from all the work!!!! ($$$ saved)Change the water
often (it will warm up) and then when the has cooled off
put in fridge.
Oh, and also, I add dry milk powder to the dry ingredients.
This adds more protien and calcuim without affecting the
taste. Last time I made the whole thing with milk powder
and water...
I just added more milk powder than called for to make up
the milk.
