I love sweets, but I also want to be
healthy and want my family to eat healthy too. This can be a challenge
when you spend years consuming junk wrapped in colorful packages.
I can't stand the taste of processed, nasty sweets now, but my
children...well, we are working on that. Here's my ice cream
replacement; it's good for you and tastes fantastic!
Raw Goat Milk Soft Serve
Bananas are the base for this. Without them you won't get a whipped,
creamy texture. Freeze them after they are good and ripe. I peel dozens
at a time and freeze them in freezer bags to have on hand all the time.
In a food processor, place about 3 or 4 of your frozen bananas. Let
them sit out for 20 minutes or so to get a little soft so they don't
break your blades.
I add 4 or 5 frozen strawberries. (also let sit out for a bit)
You can add any berries or no berries.
I also add walnuts and vanilla extract.
If you are desiring chocolate ice cream, add some instead of the
berries. If making chocolate, use powdered cocoa or carob, or a syrup.
I would also then add almond extract for richness.
Add 1 cup raw, strained, chilled goat milk. (you can really use any kind

,
but if you have goats, why would you?! The goats' milk makes it so rich
and creamy) Coconut milk or cream would be mighty tastey too!
Whip it all up in your food processor. Whip it until it's thick, creamy, and fluffy looking.

You can top this with real whipped cream , chopped nuts, sprinkled bee pollen, or chocolate syrup.
Don't worry about sweetners, this is very sweet as it is. I don't like
to add anything- it's delicious as is! This is a really nice
treat and you can serve this to company if you make it pretty. They
will be impressed that something so "healthy" can also taste so good.
I don't like to freeze left overs, because this mixture turns brown
when I do. It tastes good still, but looks not too pretty anymore.
