Mmm...
my house smells divine! I have my favorite granola in the oven! I'll
post my recipe (my own modification of a Sue Gregg recipe) at the
bottom of this entry.
Today there is snow on the ground again, I have all my does bred but
one, and she will come into heat again next Sunday. On Monday nights I
lead a women's Biblestudy and that has been a real blessing to me. It
requires me to keep my nose in The Word! I love it.
My husband is
feeling yucky again, and it's because he started chewing again. He gets
ill every time! I say my prayers...and he blames it on me!

The children and I are doing a study on King David's life, and we
switched our science to "Exploring Creation with Botany". These two
changes have made a huge difference in our enjoyment of learning!
We are planning our first homeschool co-op meeting for early spring.
The children are SO excited. They are really looking forward to the
whole thing. We are going to do sewing, baking, nature sketching, and
health & nutrition with the girls, and small engine repair, archery
first aid & CPR, carpentry, camping, etc. with the boys. That's
just the tip of the iceberg for our "wish list" of things. Ought to be
grand! So much to learn and to teach...soapmaking,
cheesemaking,horseback riding,gardening, oh, it's gonna be tons of fun.
So, here's my recipe for:
Health Nutty Granola
- 16 cups whole rolled oats (I like thick)
- 1 cup each: raw pecans, cashews, almonds, and walnuts (all chopped roughly)
- 1/2 cup each: raw pumpkin and sunflower seeds
- 1 cup organic flaked coconut
- 1/4 cup wheat germ
- mix in a microwavable bowl the following:
- 1 1/4 cup cold-pressed olive oil
- 1/4 cup coconut oil
- 1 cup raw honey
- 1/2 cup pure maple syrup
- 1 TB vanilla
- 2 ts sea salt
Mix those ingredients and heat in the microwave 30 seconds, stir, and repeat.
Mix all ingredients until coated thoroughly.
Press into a large baking dish firmly (you will ned two pans or more if they aren't as huge as mine.

Bake at 300 for 20-40 minutes -or- put in the oven on lowest temp and leave for a few hours.
*When you take it out of the oven, add 1/4 cup of flax seeds.
Keep in tightly lidded container in the fridge

Sprinkle over homemade raw yogurt with berries and you have a
great breakfast that's super easy, and nice enough to serve to company.
**You can add some more oils and maple syrup and honey, mix it in
batches in the Kitchenaid, and press REALLY firmly in the pan, and then
you will get granola bars! When they cool cut them into rectangles.
They won't last long.
