Great Hot Dip For Fall

Posted in My Tasty Treats
I love party foods! Especially dips! One of my favorite snack dips is Hot Broccoli Dip. It is a Pampered Chef recipe and it is so good! Our friend Danielle is the one who introduced it to us about 10 years ago. It was always a favorite when we got together for a Creative Memories scrapbook workshop, PartyLite candle show or just when we stopped over at each others houses!
We hadn't had it for a long time.... I am talking like a couple of years. When I was planning Mama's surprise party back in August, I decided it HAD to be on the menu!

So I had to hunt for the recipe because I couldn't remember it. It took a bit, but finally found a site that had it! I thought I should share it with y'all too!

Hot Broccoli Dip

1 cup fresh broccoli florets, chopped (about 6 oz.)
2 TBSP onion, chopped
2 TBSP red bell, chopped
1 oz (1/4 cup) Parmesan cheese, grated
1 garlic clove, pressed
1 cup (4 oz.) shredded cheddar cheese
1/2 cup fat-free sour cream
1/2 cup fat-free mayonnaise
1/8 tsp ground black pepper
Preheat oven to 375° F.
Chop broccoli, onion, and bell pepper; place in a bowl. Grate parmesan cheese; add 2 tablespoons to vegetable mixture. Press garlic and add to vegetables along with remaining ingredients, mixing well.
Spoon into a small baker pan. Bake 20-25 minutes or until heated through. Sprinkle remaining 2 tablespoons Parmesan cheese over top and surround with Pita Chips for serving. Yield 2 cups (16 servings)

When I made it for Mama's party, it was enough for about 20 people. We eat it with tortilla chips. Normally just corn, but the blue corn are extremely good with it! Of course, we only eat organic too! ;)
Let me know what you think of this recipe when you try it! I would love to know! You can read some more of my Snack Foods
here. Got any favorite snacks or dips you love? :)
Happy eatin'!
Prayers and Blessings,

I Heart Clam Chowder

Posted in My Tasty Treats
One of my favorite soups is Clam Chowder. YUM! Back in February and March our menu plan had a whole week where we ate different soups for dinner. The Clam Chowder was my favorite! I found a really great recipe that I loved and thought I would share it with you too.

Clam Chowder

Ingredients:
3 slices turkey bacon, diced
1 cup chopped onion
3 cups diced potatoes
1 bottle (8 ounces) clam juice
1 teaspoon salt
1/4 teaspoon pepper
2 cans (approximately 7 ounces each) minced clams
3 tablespoons flour
2 cups half-and-half
1 cup milk
I did not use any clam juice. I used just the cans of clams and then rinsed out the cans with water. It was plenty clammy too!

Prep and Cook:
Cook bacon until crisp in a Dutch oven or large, heavy saucpan. Remove bacon to paper towels with slotted spoon; drain. Add onion to bacon drippings; sauté until softened. Add potatoes and clam juice, salt, and pepper. Cover and simmer for about 15 minutes, or until potatoes are tender. Remove from heat. Add minced clams with their liquid. Whisk flour into milk; add to chowder with half-and-half. Cook over medium heat, stirring constantly, until clam chowder thickens and bubbles, or about 3 minutes.
Clam chowder recipe serves 4.

This clam chowder is so good! I absolutely loved it! I think I am going to put it on the menu for this next week! Its really good with homemade rolls too!

What is your favorite soup?
Do you have a clam chowder recipe?

Prayers and Blessings,

CcubedN, Its What's For Dinner!

Posted in My Tasty Treats
Last week a Mama im'ed me and asked me if I had any quick and easy dinner ideas/recipes that she could whip up. Uhhh... let's see... I asked her what meat and sides she had. I ended up telling her about this really good dinner I came up with. I should probably give it a name, huh? :P Well I will call it...CcubedN: Creamy Cheesy Chicken Noodles. It's lame I know! I gave her the recipe and a couple days later she im'ed to let me know how much her whole LOVED it. So since they really liked it, I thought I would share it so other families could whip up this dinner and enjoy it!

You will need:

 2-3 Chicken Breasts
1 8oz. package of Cream Cheese
Shredded Cheese (Monterrey Jack works great!)
 Garlic
 Onion
2-16oz. packages of Noodles. (Whichever you want. I like Penne Rigate)
 1/2 cup Milk
Italian Seasonings (you can use your favorite seasonings instead)
Put the noodles in a pan of boiling water. Cook the chicken all the way with the garlic, onion, and italian seasonings. Cut up the chicken into small pieces. Put back into pan and add the Cream Cheese and Milk. Medium heat til soft and creamy. You may have to add more milk to get the right consistency of creaminess. Add in the shredded MJ to the creamy sauce. Keep on low til the noodles are done. When the noodles are done, pour the sauce over the noodles, and stir well. Make sure the noodles are covered with the sauce. Then put in a oven safe dish and shred some MJ over the top and bake for about 15minutes on 400' or until the cheese is slightly brown and crunchy on top.
Serve with your favorite veggies. The Fried Green Beans go great with this dish!

That is how I make CcubedN. Now I know its not like an "official recipe", but since I did make it up on my own that is the way I make it. Also, that recipe will feed a family of 10, so you can amend the recipe to fit your family. If you have 5 in your family, you could make this recipe and have either seconds or leftovers! :)

 Mama
absolutely loves this dinner and raves everytime I make it! I to say this dinner is so tasty

I would love to know if you try this recipe and how you and yours like it!
Prayers and Blessings,

Black Forest Cake from Scratch

Posted in My Tasty Treats
For Isaac's birthday I made a Black Forest Cake. It is not funny how I always end up making cakes for birthdays, even though every cake I make falls apart! Seriously!
Anyway...I thought I would share the recipe because everyone praised how good the cake was! The Black Forest Cake is my favorite cake, y'all!

Double Chocolate Cake
1 can of Cherry Pie filling
1 Betty Crocker Chocolate whipped frosting
1 can of Redi-Whip

Double Chocolate Cake
1 2/3 cups all purpose cake flour
1 cup evaporated cane juice
1/4 cup cocoa
1 tsp baking soda
1/2 tsp sea salt
1 cup water
1/3 cup oil
1 tsp vinegar
1/2 tsp vanilla
1/2 cup chocolate chips
1/2 cup chopped walnuts

Heat oven to 350'. Mix flour, evaporated cane juice, cocoa, baking soda, and salt. Mix in remaining ingredients.
Butter and Flour 2 circle pans. (I had to use one 9x13 pan because we don't have 2 circle pans.)
Bake until tester comes out clean. Cool cake and then release from pan.

Take the cherry pie filling and layer one cake with it. You won't use all of it. Lay the other cake on top of it. Frost the whole cake. Take the redi whip and make a border on the top.
Here is what mine looked like:

Everyone said they really liked it... I guess these pictures show it, huh! :D
