So summer is almost over... sigh... where did the year go?? Our garden is growing strong with... weeds. another sigh. We had had lots of veggies, though too. One thing that is my favorite veggies, but Mom forgot to plant this year is cabbage. So when I went to the grocery store last week, I picked up a head of cabbage to make one of my favorite salads. Cabbage Salad. Mmm... I made some the other nite, and I was just so happy I had gotten that head. Mom, Jocelyn, Rachel and I are the only ones who like it. I am a big salad fan. I could probably live off salads.
Well, this salad is light and filling, and yet leaves room enough for the main dish, while not filling you too much. Hey, that works out great with dieting, right??
Here is my recipe for Cabbage Salad.
Cabbage Salad
1/2 head of cabbage (I just used what we would eat)
1/2 Onion
1/3cup Vinegar
3tablespoons of olive oil
2tablespoons of sugar
1teaspoon salt
Mix well, chill and serve.
It tastes better when it has set in the dressing.
Well, I absolutely love cabbage salad. Enjoy!!
