banana oat waffles

From my inbox...

1 ripe banana, mashed
2 cups water (or soymilk, almond milk, rice milk)
1/2 cup rolled oats, uncooked
1 1/2 cups whole wheat flour
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. nutmeg
vanilla extract, to taste (optional)
2 Tbs. maple syrup (optional)
1 cup pecans, chopped (optional)

Directions:

  1. Soak the oats in water or non-dairy milk over night.
  2. Mix together the mashed banana and oat mixture.
  3. Add remaining ingredients and mix, leaving some lumps in the batter.
  4. Cook on a waffle iron, according to the manufacturer's instructions (Note: The batter also works for pancakes).
  5. Top with fresh fruit and some syrup
