I've been using a lot of apples lately. I had heard that you can use the peelings and cores for air fresheners. Just put the apple cores and peelings in a pot, cover with water. Then add a stick of cinnamon and a teaspoon of vanilla. Heat to boiling then turn down to a slow simmer.
Can you smell it now?

This is absolutely the EASIEST bread recipe that I have ever used. It is a "quick" sour dough recipe. It uses quick rise yeast, not the traditional "slow starter." Warning- it can be habit forming if eaten straight from the oven with real butter and honey!
This recipe makes 2 loaves.![]()
Starter-
1 &1/2 cups bread flour or unbleached flour (I have also used whole wheat)
2 tablespoons instant potato flakes
2 tablespoons of sugar
1 package (envelope) of rapid rise yeast
1 & 1/2 cup warm water
(mix together the first 5 ingredients, let rise, covered, until doubled in size or about 90 minutes)
Then add the following to the above starter-
4 1/2 cups bread flour
1/2 to 2/3 cups of sugar
2 tsp. salt
1/2 cup veg. oil
1 cup warm water
Mix together well. Turn the dough onto a well floured surface. (Dough will be VERY sticky) Knead the dough, adding flour to make it manageable. Knead for about 5 minutes or until the dough is smooth. Put into a large greased bowl. Cover. Let rise in a draft-free warm place until doubled in size. ( I set my timer for 90 minutes)
Pour dough onto a well floured surface again. Knead for 5 minutes or until smooth and elastic like. Cut the dough ball into half. Put into 2 well greased loaf pans. Let rise another 60-90 minutes, covered.
Bake in a pre heated over at 350*-375* oven for about 40 minutes. Tap the bread after 40 minutes. If it sounds hollow, it is done. (40 minutes has always been long enough in my oven at 350*.) Put onto cake or loaf racks to cool. Butter top of bread if desired. Wait about 15 minutes before slicing and enjoying!
This bread rises faster when the temps are warm in the summer. The rise may take a bit longer if made in the winter. I made some a few weeks ago when it was very hot and humid, it didn't take long to rise at all.![]()
It is also easier to slice the bread without tearing it apart if you turn the bread on its side and slice. That way it doesn't "push" the bread down and tear it up. A serated (sp ?) knife works best.![]()

I almost forgot to post this recipe. It is so easy and so yummy! Enjoy!
Apple Goodie-
3/4 cups of sugar
2 Tbls.flour
1/8 tsp. salt
1/2 tsp. cinnamon
1/2 apple pie spice (or nutmeg)
1 tsp. lemon juice
4 cups sliced apples (I use granny smith or any other baking apple)
Topping-
1/2 cup oatmeal
1/2 cup brown sugar
1/2 cup flour (self rise)
1/4 cup butter, softened
1/2 tsp. cinnamon
Combine sugar, flour, salt, cinnamon, lemon juice, and spices. Add apples and mix until completely covered . Grease a casserole pan ( I used the one that is a size smaller than the 13 x 9.) Pour the apples into the greased dish and set aside.
Combine the topping ingredients, mixing completely. Add the butter in small bits into the topping mix. Rub the butter into the topping until it is crumbly. Pour this onto the apples, making sure that it is spread our evenly. Bake at 350* for about 40-45 minutes. Enjoy!
I am going to have to get some more apples! Yummy!

I'm a milk dud "junkie." I came across this recipe. It looks great. How can you ever go wrong with chocolate and caramel?![]()
Chewy Milk Duds Cookies
1 1/2 cups butter-flavor shortening
1 1/2 cups peanut butter
2 cups granulated sugar, divided
1 1/2 cups packed brown sugar
4 eggs
3 3/4 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 (10 ounce) package Milk Duds
In a mixing bowl, cream the shortening, peanut butter, 1 1/2 cups of the sugar and brown sugar. Add eggs, one at a time, beating well after each addition.
Combine dry ingredients; gradually add to the creamed mixture. Chill for at least 1 hour.
Shape 4 teaspoons of dough around each Milk Dud so it is completely covered. Roll balls in remaining sugar. Place 2 inches apart on ungreased baking sheets. Bake at 350 degrees F for 10 to 12 minutes or until set. Cool for 5 minutes before removing to wire racks.
Yields about 8 dozen.

Has anyone ever done this? I tried it once before just by cutting up the potatoes and then freezing. They were VERY limp and soggy after frying them( YUCK!
) I have seen various recipes that call for blanching with water for 5 minutes then cooling and flash freezing. I have also seen a recipe that says to cut, then fry at 375 for 5 minutes, cool and freeze.
What have you done to make Home made fries and that freeze well and then can go directly to a deep fryer?

BOILED PEANUTS

Bring a large pot (about 7 quarts) of water to a boil. Pour in 1/4 cup of salt (canning or kosher salt is less expensive).
Drop peanuts in to boil; put plate on top of peanuts. Fill a jar with water and set on top of plate to keep peanuts under the water. Cook over high heat until peanuts begin to boil. Turn off heat. Allow to cool. When cool, bring to a boil again and cook for about 15 minutes. |
We use fresh raw peanuts in this recipe. The longer you let the peanuts sit in the salty water, the better.
They need to sit in the water a long time so that the peanuts will absorb the salty water. When they have cooled for the last time, just put them into a bowl, start shelling and ENJOY a real treat!
PS- Hubby makes the best boiled peanuts around. This is really his recipe!

2 eggs, beaten 1 c. buttermilk 6 tbsp. sweet cream Dash of salt 1 tsp. vanilla 3/4 tsp. soda 1 tbsp. baking powder 3 c. flour 1 tsp. nutmeg
Mix together and use "Donut Maker" to drop into deep fryer. Yield: 3 dozen.

I found this recipe online for Taco Seasoning. Sounds like a great option if you run out and have these ingredients already.
- Spoon 1 tablespoon of minced dried onions in a small bowl or cup.
- Add 2 teaspoons of chili powder.
- Add 1 1/2 teaspoons of salt.
- Add 1 teaspoon of garlic
- Add 1 teaspoon of cornstarch.
- Add 1 teaspoon of ground cumin.
- Add 1/2 to 1 teaspoon cayenne pepper or hot paprika.
- Stir to blend.
- Makes the equivalent of a 1 1/4-ounce package of taco seasoning
I found this recipe for home made instant onion soup mix. I use alot of this in my recipes. This recipe being made at home is less expensive than the store bought brands at .99 and up per box. You can get most of the ingredients at the Dollar Tree or the Dollar General very inexpensively.
Onion Soup Mix
1 1/2 cups dried minced onion
2/3 cup beef bouillion granules
2/3 cup onion powder--not onion salt
1/2 teaspoon sugar
Mix all these ingredients together and store in an airtight
container. This recipes makes about 3 cups mix. I use 4 or 5 tablespoons when a recipe calls for one envelope mix.
